Nutrition found in milk

One cup (or 250 ml) of milk with a fat content of 2% contains 285 mg of calcium which represents 22-29% of the recommended daily dose of calcium for an adult, 8 grams of protein and many other nutrients (either natural or via additives):

  • Vitamin D and vitamin K– necessary for healthy bones,
  • iodine a mineral necessary for thyroid function,
  • vitamin B12 and riboflavin – necessary for cardiovascular health and energy,
  • biotin and pantothenic acid – B vitamins important for the creation of energy,
  • vitamin A – necessary for immunity activities,
  • potassium and magnesium– for cardiovascular health,
  • selenium- trace element for the prevention of cancer,
  • thiamine - B vitamin important for brain activity, mainly memory,
  • linoleic acid – beneficial fatty acid which suppresses several types of cancer in mice, according to studies, it destroys cells of human skin cancer, rectal cancer and breast cancer, and can help to decrease cholesterol levels and prevent atherosclerosis. It is only available from the milk of cows fed with grass.

Curd cheese cake with fruit

Ingredients

1 kg Nitriansky soft chunky curd cheese, 4 eggs, 10 tbsp icing sugar, 8 tbsp semolina, 30 g raisins, 1 sachet vanilla sugar, 1 sachet baking powder, butter and breadcrumbs for preparing the baking tray, fruit

Preparation method

Mix the curd cheese until smooth, add beaten eggs and sugar. Mix the semolina with the baking powder and gradually add to the curd cheese. Finally, add pre-soaked, drained raisins and vanilla sugar. Grease the baking tray with butter and sprinkle with sieved breadcrumbs. Evenly spread the mixture in the pan and place the fruit of your choice over it (The fruit can be covered with flour or icing sugar prior to being added). Bake the cake in a medium oven for 40-45 minutes. Slice the cooled cake into even pieces. Advice and tips from the cook Lightly cover the raisins with flour before adding to the mixture. Cheese crumpets

Ingredients

200 g grated cheese, 250 g flour, 20 g yeast, 400 ml Nitrianske fresh semi-skimmed milk, 2 eggs, pinch of salt, oil for frying

Preparation method

Make dough with the tepid milk, salt, yeast and flour; add the egg yolks and leave to rise for 20 minutes in a warm place. Mix the grated cheese and beaten egg whites into the dough, stir gently and fry the small crumpets in a greased pan. Serve hot with vegetable salad. Egg free yoghurt ice cream

Ingredients

600 ml Tami white creamy yoghurt, 200 g fruit – strawberry, raspberry, blackberry, 3 tbsp honey (honey prevents crystallisation of the yoghurt in the freezer), paper cases for muffins (12)

Preparation method

Mix the yoghurt with the honey. Add the fruit and the mixture. Distribute between the paper cases. The cases can go into a baking tray for muffins to keep their shape. Cover the tray with foil and freeze for at least 3 hours. Before serving, leave for 10-15 minutes to soften so it won’t be very hard when served. Advice and tips from the cook Strawberries sometimes cause irritation, mainly to children. Therefore, sugar the strawberries for children or serve with whipped cream or milk. Curd cheese and milk Tiramisu

Ingredients

2 pots of Nitriansky soft chunky curd cheese, 1 vanilla custard powder, 1/2 l Nitrianske fresh semi-skimmed milk, icing sugar (according to taste), round or long biscuits, liqueur or rum (if you have it, amaretto is the most tasty), 125g butter, ground coffee beans

Preparation method

Mix the softened butter with sugar, add curd cheese and sugar to taste. Keep stirring the custard while it cools (to prevent lumps from forming). Slowly pour the cooled but still liquid custard into the curd cheese mixture. Gently mix using an electric mixer to bring everything together. Alternate layers of the mixture and biscuits which you very quickly (to prevent them falling apart) soak in the coffee with liqueur, or spray them using a 1 ml syringe. You can layer them in dishes (bowls or cups) which you have at home. They are prettier in glass bowls. Place the ready dishes into the refrigerator overnight and no earlier than an hour before serving, sprinkle with cocoa so that it lays nicely on the surface, otherwise it will all soak into the mixture. Advice and tips from the cook For children, I make it with mandarins or raspberries and I use juice for soaking the biscuits. Instead of cocoa, I sprinkle with Granko to taste.

 

Bundt cake

Ingredients

350 g plain flour, 300 g icing sugar, 500 ml Nitrianska soured milk, 100 ml oil, 2 tsp bicarbonate of soda, pinch of salt, cocoa

Preparation method

Mix all the ingredients together, pour half of the mixture into the bundt mould. Add cocoa to the other half and then add to the mould. Bake slowly in a preheated oven. When ready, turn out. When cool, top with chocolate topping or sprinkle with icing sugar.
